“The dry, King Valley riesling. This is meant to look a little firm edged, with a quick soak/skin contact, a touch of barrel and firmer pressing. It works. Around five grams residual sugar remains for balance.

Racy, pure, glass shard texture, green apple, lime, pink grapefruit but with a barely there plushness just gently correcting the balance to ‘drinkability’. Talc, mixed mineral feel, saline notes, a lick of sweet chalkiness. The energy high, the pleasure all there. A ripper drink”
