No wonder famed American wine critic Antonio Galloni has said that ‘These are some of the most ground-breaking, intensively captivating wines being made in Chablis today.’ He then added that ‘Thomas Pico is on his way to becoming a superstar’.

We feel that this journey is progressing swiftly! It started with Thomas studying enology in Cotes de Nuits, part of the limestone ridge set in the heart of the Burgundy region. Pattes Loup (‘Wolf’s Paws’) came to life on a tiny domaine in Courgis, by the village of Chablis itself. Having inherited a handful of hectares of vines from the family estate, he found them to be producing correct but rather uninspiring wines.

Like many sons, he went against the wishes of his father by turning to organic viticulture. This required true commitment in the climatically-challenging Chablis region. He works precisely, tenaciously and diligently; emphasised by his commitment to hand-harvesting the vineyards and then hand-sorting the grapes. His wines are fermented using indigenous yeasts, and they are then bottled without fining and filtration.

This passionate devotion to the production of Chablis which epitomizes both the soil and spirit of his terroir, produces wines which sing Chablis with a proud, beautiful and truly vital voice. You’ll find them bright in their purity, gloriously minerally, and with a pleasing density offering stratas of texture and many complex layers.
