Very appetising start with a mix of bitter citrus and toasted nuts, think pomelo plus hazelnuts, or pink grapefruit and salted pistachios. Just yum. Apple, pear and lemon curd are here too, with a very fine rock dust texture. The flavour builds up in the finish. Pure salivation. I’m looking forward to 2025. It’s a personal 95pts, but for some sort of fairness of things, it will remain 94pts here.
