Meanwhile, the Schlossberg Pinot Gris was a pet project of Jérôme’s for many years and has long been one of our very favourite wines. With a nod to Burgundy he always barrel-fermented it and typically in one 500 litre oak barrel and one special, stainless steel barrique, such were the small volumes. But in 2021 the volumes were so low that the stainless steel barrique was retired and just the one 500 litre barrel used.

And the result? Well the 2021 might just be his piece de résistance! His last rendition and his best yet. Fermented just a couple of grams shy of bone dry, the wine was kept on un-stirred lees for 11 months, building in some beautifully judged struck-match complexity. To do it justice serve it in a bowl-shaped, ‘Montrachet’ glass where the tension between these flinty elements, the ripe mouth-filling  fruit (13.6 %) and the scintillating acidity (7.3 g/L) is on full display. It’s a masterpiece of complexity and power. And the last one. Ever.
