This is intense and layered, rich and though amplifies stone fruit, pear, ginger and cinnamon whipped through vanilla cream and light toffee apple characters, there’s pulses of crystalline minerality shot through and a fine grip of brown pear skin throughout. A waxiness to texture, a gloss and sheen too. There’s a lot packed into this wine, it revs up as it moves to room temperature too. Pass the foie gras? Or, as we did, a ‘Central Coast nachos’ where chipotle chilli sauce was whipped through yoghurt and corn chips were dunked in.
