Nicolas Jacob is a native of the Jura who came to wine by an unusual route, spending his early years working on local organic vegetable farms before catching the wine bug. What set him apart from the start was an instinct for finding the right teachers: he apprenticed first under Laurent Macle at the legendary Domaine Macle in Château-Chalon, absorbing the traditional, oxidative style Jura built its reputation on, before moving on to work alongside Jean-François Ganevat, eventually becoming his right-hand man and mastering every side of the domaine, from vineyard work to vinification. In 2015, at just 25, he struck out on his own with a little over one hectare in the prized L’Étoile appellation, planting Chardonnay, Savagnin, and Pinot Noir. Four years later, in 2019, he expanded significantly, acquiring a small winery and cellar beneath his house in Cesancey along with roughly five more hectares spread across parcels in Augea and Rotalier, bringing his total holdings to around six hectares and adding Poulsard and Trousseau to his repertoire—giving him all five of Jura’s classic grape varieties to work with.
What makes the wines remarkable is the same obsessive, old-school rigor his mentors instilled in him. Jacob farms organically and biodynamically, using only copper sulfate, biodynamic tisanes, and essential oils as treatments, with almost everything done by hand. In the cellar, he ferments and monitors each parcel separately, aging the wines without intervention in used barrels and demi-muids, topped up to the brim to prevent oxidation, and only decides on a final blend once each cuvée has achieved a rare clarity and focus—a process that can stretch into years of élevage. The results have earned him a reputation, in the words of one importer, for wines of “unprecedented purity,” ones that seem to open and improve in the glass over many days rather than fade. Despite having only been fully independent since 2019, Jacob has quickly become recognized as one of the most exciting young talents in the Jura—spoken of in the same breath as his mentors, yet already carving out a style and clarity distinctly his own.

Importer Note

Much like the Jura’s native varieties, Gamay is naturally light in colour and low in tannin, making it perfectly suited to Nico’s gentle approach in the cellar. This release comes from fruit harvested with Raphaël Saint-Cyr in Bellevue, in the southern reaches of Beaujolais.

The grapes were fermented as whole bunches before being pressed into old barrels, where the wine rested for a year. The result is a wonderfully charming and expressive Beaujolais, with generous red berry fruit, delicate florals and a subtle savoury edge. There’s plenty of freshness and energy on the palate, balanced by soft texture and impressive depth. Beautifully vibrant and immediately inviting, it’s the kind of Beaujolais that disappears from the bottle remarkably quickly.
