“Our 2019 Rosé is an all-Beechworth blend of Sangiovese and Pinot Noir. Made as a white wine, fruitis crushed, stomped and basket pressed to a mix of old barriquesand puncheons with full solids, where it wild ferments without temperature control. It sees three to four months on lees before sulphuring, finishing and bottling. It’s always bone dry, and should be savoury and complex yet thirst-slaking” Winemaker notes
